- Stir the almond butter, almond flour, maple syrup, vanilla extract, and fine sea salt together until a thick, cohesive dough forms.
- Chill the mixture for 15–20 minutes if it feels too soft to shape. Scoop approximately 1 tablespoon per truffle, roll each portion into a smooth ball, and arrange the balls on a parchment-lined tray.
- Freeze or refrigerate the shaped truffles for another 15–20 minutes so they become firm enough to dip.
- Melt the chocolate chips with the coconut oil in short microwave intervals, stirring between each interval, or melt them gently over a double boiler.
- Dip each chilled truffle into the melted chocolate, letting excess coating drip back into the bowl. Return the coated truffle to the parchment and immediately add any desired toppings.
- Refrigerate the finished truffles for 15–20 minutes, until the chocolate coating is firm. Store them in an airtight container in the refrigerator.
Notes
Natural almond butter varies in thickness. If the mixture is loose, add almond flour 1 tablespoon at a time; if it is dry or crumbly, mix in a small amount of additional almond butter or maple syrup. Coconut oil is optional but helps make the chocolate smoother for dipping. Agave syrup may replace maple syrup. Coconut flour absorbs much more liquid than almond flour, so use only about 2 tablespoons in place of the 1/2 cup almond flour and adjust with additional almond butter or syrup as needed. Use dairy-free chocolate to make the truffles vegan.
