- Heat the oven to 350°F (175°C). Grease mini muffin cups or line them with small paper liners. Chill the unwrapped miniature peanut-butter cups while preparing the dough.
- Beat the softened butter, creamy peanut butter, granulated sugar, and packed light brown sugar until light and fluffy. Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually mix the dry ingredients into the peanut-butter mixture until a soft dough forms.
- Shape the dough into roughly 1-inch balls and place one ball in each prepared mini muffin cup.
- Bake for 10-12 minutes, until the cookies are lightly browned around the edges but still soft in the centers.
- Immediately press one chilled miniature peanut-butter cup into the center of each hot cookie.
- Cool the cookies in the pan for about 10 minutes, then transfer them carefully to a wire rack to finish cooling.
Notes
Chilling the candies helps them hold their shape when pressed into the hot cookies. Do not overbake; the cookies should look just set around the edges and will firm as they cool. Let them cool in the mini muffin pan before removing them so they do not break.
