Ultimate Easy Twice-Baked Potatoes

Crisp russet potato skins are filled with a creamy sour cream and butter potato mixture, bacon, Cheddar cheese, and green onions before a second bake. Serve four generous potato halves or eight smaller portions.

Potatoes and Toppings
  • 4 Large russet baking potatoes
  • 8 slices Bacon
Creamy Filling
  • 1 cup Sour cream
  • 1/2 cup Milk
  • 4 tablespoons Unsalted butter
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Ground black pepper
Cheese and Garnish
  • 1 cup Shredded Cheddar cheese, divided
  • 8 Green onions, thinly sliced and divided
Optional
  • As needed Olive oil or vegetable oil for rubbing potato skins

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Scrub and dry the russet potatoes, pierce each several times with a fork, and rub the skins with a little oil if desired.
  2. Bake the potatoes directly on the oven rack or on a baking sheet for 60–75 minutes, until a fork or skewer slides easily into the centers. Meanwhile, cook the bacon until crisp, drain it, and crumble it.
  3. Let the potatoes cool for 15–20 minutes, or until they are comfortable to handle. Cut them in half lengthwise and scoop out the flesh, leaving about a 1/4-inch layer attached to each skin.
  4. Mash the potato flesh with the sour cream, milk, butter, salt, and black pepper until creamy and combined. Fold in about half of the Cheddar, half of the sliced green onions, and most of the crumbled bacon without overmixing.
  5. Spoon the filling back into the potato shells and arrange the halves on a baking sheet. Sprinkle the remaining Cheddar, green onions, and bacon over the tops.
  6. Bake the filled potatoes at 350°F (175°C) for 15–20 minutes, until hot throughout and topped with melted, lightly browned cheese. Serve warm.

Notes

Leave about a 1/4-inch potato layer inside every skin so the shells stay sturdy. Mash only until creamy because excessive mixing can make the filling gluey. For crisp skins, oil and salt the potatoes before the first bake and place them directly on the oven rack. Store leftovers covered in the refrigerator and reheat until hot.
