- Place the cut potatoes in a large saucepan and cover them with cold water by about 1 inch. Add 1 1/2 teaspoons kosher salt, bring the water to a boil, then reduce to a steady simmer.
- Cook the potatoes for 15–20 minutes, or until they are completely tender when pierced with a fork. Drain thoroughly, return them to the warm saucepan, and let them sit for 1–2 minutes so excess moisture can evaporate.
- Warm the butter and milk or half-and-half together in a small saucepan or microwave-safe container. Keep the mixture warm, but do not let it boil.
- Mash the potatoes with a hand masher or potato ricer. Gradually add the warm dairy mixture, stirring gently until the potatoes are creamy.
- Fold in the shredded sharp cheddar, black pepper, and sour cream or garlic if using. Mix only until the cheese is combined and melted.
- Taste and adjust the salt. Serve hot with optional extra cheddar, butter, chives, or sliced green onions.
Notes
For the smoothest texture, shred cheddar directly from a block and avoid a food processor or overmixing. Keep leftovers refrigerated and reheat gently with a splash of milk or half-and-half.
