- Heat the oven to 400°F. Toss the shredded chicken with the Buffalo sauce until every piece is evenly coated, warming the chicken briefly in a skillet or microwave first if it is cold.
- Spread half of the tortilla chips over a large rimmed baking sheet or oven-safe platter. Scatter half of the Buffalo chicken, cheddar, Monterey Jack, blue cheese, celery, and green onions across the chips.
- Add the remaining chips and repeat with the remaining chicken and cheeses. Bake for 8–12 minutes, until the cheese is fully melted and the chip edges are lightly browned.
- Drizzle the hot nachos with ranch dressing and garnish with the remaining green onions, cilantro or parsley, and jalapeño. Serve immediately with extra ranch and Buffalo sauce on the side.
Notes
Use thick restaurant-style tortilla chips so they hold up under the chicken and sauce. Layering twice distributes the toppings and keeps the bottom chips from being plain. Add ranch after baking because heating it can cause separation and oiliness. Serve immediately because sauced nachos lose their crispness quickly.
