- Mix the mayonnaise and finely chopped, well-drained cherry peppers in a small bowl. Taste the mixture and add a pinch of kosher salt if needed.
- Spread the cherry-pepper mayonnaise over the inside of all eight bread slices. Divide the turkey among four slices, then top each with two slices of provolone.
- Place the remaining bread slices on top to close the sandwiches. Spread the softened butter evenly over the outside of each sandwich.
- Heat a large skillet or griddle over medium-low to medium heat. Place the sandwiches in the pan and grill for about 3–5 minutes per side, pressing lightly with a spatula.
- Continue cooking until the bread is crisp and golden and the provolone is melted. If the bread is browning before the cheese melts, briefly cover the skillet.
- Transfer the sandwiches to a plate and let them rest for 1–2 minutes. Cut each sandwich and serve while warm.
Notes
Drain the cherry peppers thoroughly before chopping so excess pickling liquid does not make the bread soggy or interfere with browning. Use medium-low heat instead of high heat to give the provolone time to melt before the bread becomes too dark.
