Cake
  • 1 cup (226 g) Unsalted butter, softened
  • 2 1/2 cups (500 g) Granulated sugar
  • 6 large Large eggs, at room temperature
  • 3 cups (360 g) All-purpose flour
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon Fine salt
  • 1 cup (240 ml) Full-fat canned coconut milk, well stirred
  • 1 teaspoon Pure vanilla extract
  • 1 teaspoon Coconut extract
  • 1 cup (about 85 g) Sweetened shredded coconut
For the Pan
  • As needed Softened butter or vegetable shortening
  • 1-2 tablespoons Flour or fine dry breadcrumbs
Optional Glaze
  • 1 cup (115 g) Confectioners' sugar
  • 2-3 tablespoons Coconut milk
  • 1/2 teaspoon Coconut extract or vanilla
  • 1/3 cup Toasted shredded coconut

Method
 

Step-by-Step
  1. Heat the oven to 325°F (165°C). Grease and flour a 10-inch Bundt pan or 10-inch tube pan thoroughly, paying special attention to the center tube and decorative ridges.
  2. Whisk together the all-purpose flour, baking powder, and fine salt in a medium bowl.
  3. Beat the softened butter and granulated sugar on medium speed for 4–5 minutes, until pale and noticeably fluffy. This thorough creaming step helps create the cake's fine pound-cake texture.
  4. Add the room-temperature eggs one at a time, beating well after each addition and scraping down the bowl as needed. Mix in the vanilla extract and coconut extract.
  5. Add the flour mixture in three additions, alternating with the coconut milk in two additions. Begin and end with the flour, mixing only until the batter is combined.
  6. Fold the sweetened shredded coconut into the batter by hand. Transfer the batter to the prepared pan and smooth the top.
  7. Bake for approximately 75–90 minutes, checking near the 75-minute mark. The cake is ready when a long wooden pick comes out clean or with a few moist crumbs and the top springs back lightly.
  8. Cool the cake in the pan for 10–15 minutes, then turn it out onto a wire rack. Let it cool completely before glazing or slicing.
  9. For the optional glaze, whisk the confectioners' sugar, coconut milk, and coconut extract or vanilla until smooth. Drizzle over the cooled cake and sprinkle with toasted shredded coconut.

Notes

Use canned full-fat coconut milk rather than refrigerated coconut beverage, and stir or shake the can thoroughly before measuring. Bring the butter, eggs, and coconut milk close to room temperature. Store the cooled, glazed cake covered at room temperature for up to 3 days or refrigerate for longer storage; allow refrigerated slices to come closer to room temperature before serving.
