Tomato Beef Country Casserole

  • 1 pound Ground beef
  • 1 medium Medium onion, chopped
  • 10 3/4 ounces Condensed tomato soup, undiluted
  • 8 ounces Tomato sauce
  • 15 ounces Whole-kernel corn, drained
  • 7 1/4 ounces Macaroni and cheese dinner mix
Topping
  • 1/2 cup Shredded cheddar cheese

Method
 

Step-by-Step
  1. Heat the oven to 350°F and grease a 2-quart casserole dish.
  2. Brown the ground beef and chopped onion in a large skillet over medium heat until the beef is no longer pink. Drain the excess fat thoroughly.
  3. Stir the undiluted condensed tomato soup, tomato sauce, and drained corn into the browned beef mixture.
  4. Prepare the macaroni and cheese dinner according to the package directions, cooking the macaroni only until tender.
  5. Combine the prepared macaroni and cheese with the beef mixture until evenly blended.
  6. Transfer the mixture to the greased casserole dish and sprinkle the shredded cheddar cheese evenly over the top.
  7. Bake uncovered for about 20 minutes, or until the casserole is hot and bubbling and the cheese has melted.

Notes

Drain the beef well to prevent a greasy casserole. Do not overcook the macaroni because it will continue cooking in the oven. Store leftovers covered in the refrigerator and reheat until hot.
