Thin Mint Cupcakes Recipe

Moist chocolate cupcakes baked with crushed Thin Mint cookies and finished with peppermint buttercream, cookie crumbs, and optional chocolate drizzle. This recipe makes 12 cupcakes.

Ingredients
  

Chocolate Cupcakes
  • 1 cup (125 g) All-purpose flour
  • 1/2 cup (42–45 g) Unsweetened natural cocoa powder
  • 3/4 cup (150 g) Granulated sugar
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1 egg Large egg, room temperature
  • 1/2 cup (120 ml) Buttermilk
  • 1/4 cup (60 ml) Neutral vegetable oil
  • 1 teaspoon Vanilla extract
  • 1/2 cup (120 ml) Hot coffee or hot water
  • 12–18 cookies Thin Mints or other chocolate-mint sandwich cookies
Mint Buttercream
  • 1 cup (226 g) Unsalted butter, softened
  • 4 cups (about 480 g) Powdered sugar, sifted
  • 2–3 tablespoons Heavy cream or milk
  • 1 teaspoon Vanilla extract
  • 1/2–1 teaspoon Peppermint extract
  • A few drops, optional Green food coloring
  • 4–6 cookies, optional Thin Mints, finely crushed
Optional Decoration
  • 12 cookies Thin Mints, halved
  • 1/2 cup (85 g) Semisweet or dark chocolate chips
  • 1 teaspoon, optional Vegetable shortening or coconut oil

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C) and line a 12-cup muffin pan with paper liners.
  2. Crush 6 Thin Mints and place about 1 teaspoon of crumbs into the bottom of each liner. Reserve the remaining cookies for the frosting or decoration.
  3. Whisk the flour, cocoa powder, sugar, baking soda, baking powder, and salt together in a medium bowl.
  4. In a separate bowl, whisk the room-temperature egg, buttermilk, oil, and vanilla extract until smooth.
  5. Add the wet mixture to the dry ingredients and stir just until combined. Carefully mix in the hot coffee or hot water last; the batter will be thin, which is normal.
  6. Divide the batter among the liners, filling each about two-thirds full. Bake for 18–22 minutes, until the tops spring back lightly and a toothpick comes out with only a few moist crumbs.
  7. Cool the cupcakes in the pan for about 5 minutes, then transfer them to a wire rack and cool completely.
  8. Beat the softened butter until smooth and pale, about 2–3 minutes. Gradually add the sifted powdered sugar, mixing until incorporated.
  9. Beat in the cream, vanilla, and peppermint extract. Add green food coloring if desired, continue beating until light and fluffy, and fold in finely crushed Thin Mints if using.
  10. Pipe or spread the frosting over the cooled cupcakes. Finish with cookie crumbs, a halved Thin Mint, or a drizzle of melted chocolate.

Notes

Start with 1/2 teaspoon peppermint extract and add more only if needed because peppermint extract is powerful. Cool cupcakes completely before frosting. Store covered at room temperature for up to 2 days or refrigerated for up to 4 days; bring refrigerated cupcakes to room temperature before serving.
