- Heat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream the softened butter, chunky peanut butter, granulated sugar, and packed brown sugar for 2–3 minutes, until smooth and fluffy.
- Beat in the eggs one at a time, then mix in the vanilla extract.
- Whisk the flour, baking soda, and salt in a separate bowl. Gradually add the dry mixture to the peanut butter mixture, mixing only until combined.
- Fold in the chocolate chips or chunks without overmixing.
- Scoop rounded tablespoons or approximately 2-tablespoon portions onto the prepared sheets, spacing them about 2 inches apart. Chill the portioned dough for about 30 minutes if you want especially thick cookies.
- Bake for 10–12 minutes, until the edges are lightly golden and the centers still look slightly soft.
- Cool the cookies on the baking sheet for 5 minutes, then transfer them to a wire rack.
Notes
Do not overbake; the centers firm as the cookies cool. Weigh the flour or use the spoon-and-level method. Commercial chunky peanut butter is generally more reliable than natural peanut butter because separated oil may cause spreading or a greasy dough. Store cooled cookies in an airtight container.
