Step-by-Step
- Prepare the lettuce, cheese, tomatoes, onion, cilantro, jalapeños, olives, limes, salsa, sour cream, and guacamole, placing each item in its own serving bowl.
- Heat a large skillet over medium-high heat. Add the ground beef, using 1 tablespoon vegetable oil only if the beef is very lean, and cook for 7–9 minutes while breaking it into small crumbles, until no pink remains. Drain excess fat.
- Stir the taco seasoning and 1 cup water into the browned beef. Simmer for 3–5 minutes, stirring occasionally, until the mixture thickens.
- If using beans, warm them separately or stir them into the finished beef mixture. Refried beans make the filling creamier, while drained pinto or black beans add texture.
- Arrange the unopened chip bags, warm taco meat, toppings, salsa, sour cream, and guacamole buffet-style. Keep the chips away from wet toppings until guests are ready to assemble.
- Each guest opens a chip bag lengthwise, lightly crushes the chips, adds taco meat and toppings, and eats directly from the bag with a fork.
Notes
Keep the meat warm in a slow cooker or covered skillet, but keep chips and cold toppings separate to prevent sogginess. The meat and chopped toppings can be prepared up to one day ahead; add guacamole close to serving time to reduce browning.
