A fun, customizable party dinner featuring seasoned ground beef, individual corn chip bags, and a full taco topping bar. This recipe makes approximately 12 walking tacos.

Ingredients
  

Taco Meat
  • 2 pounds Lean ground beef
  • 2 packets Taco seasoning packets, about 1 ounce each
  • 1 cup Water
  • 1 15-ounce can Refried beans or pinto beans, optional
  • 1 tablespoon Vegetable oil, only if using very lean beef
Individual Taco Bags
  • 12 bags Single-serving bags of corn chips, such as Fritos, Doritos, or similar
Common Toppings
  • 3 cups Shredded lettuce
  • 3 cups Shredded Mexican-blend or cheddar cheese
  • 3 medium Medium tomatoes, diced
  • 1 medium Yellow or red onion, finely diced
  • 1 1/2 cups Sour cream
  • 2 cups Salsa
  • 2 cups Prepared guacamole
  • 1 cup Sliced or pickled jalapeños
  • 1 2 1/4-ounce can Sliced black olives, drained
  • 1 bunch Fresh cilantro, chopped, optional
  • 2 limes Limes, cut into wedges, optional

Method
 

Step-by-Step
  1. Prepare the lettuce, cheese, tomatoes, onion, cilantro, jalapeños, olives, limes, salsa, sour cream, and guacamole, placing each item in its own serving bowl.
  2. Heat a large skillet over medium-high heat. Add the ground beef, using 1 tablespoon vegetable oil only if the beef is very lean, and cook for 7–9 minutes while breaking it into small crumbles, until no pink remains. Drain excess fat.
  3. Stir the taco seasoning and 1 cup water into the browned beef. Simmer for 3–5 minutes, stirring occasionally, until the mixture thickens.
  4. If using beans, warm them separately or stir them into the finished beef mixture. Refried beans make the filling creamier, while drained pinto or black beans add texture.
  5. Arrange the unopened chip bags, warm taco meat, toppings, salsa, sour cream, and guacamole buffet-style. Keep the chips away from wet toppings until guests are ready to assemble.
  6. Each guest opens a chip bag lengthwise, lightly crushes the chips, adds taco meat and toppings, and eats directly from the bag with a fork.

Notes

Keep the meat warm in a slow cooker or covered skillet, but keep chips and cold toppings separate to prevent sogginess. The meat and chopped toppings can be prepared up to one day ahead; add guacamole close to serving time to reduce browning.
