Meat
  • 8 ounces Bacon, diced
  • 1 pound Ground beef, preferably 80–85% lean
  • 1 pound Bulk Italian sausage or pork sausage
Vegetables and Aromatics
  • 1 large Large yellow onion, diced
  • 2 green bell peppers Green bell peppers, diced
  • 5-6 cloves Garlic, minced
Tomatoes, Beans, and Liquid
  • 2 tablespoons Tomato paste
  • 1 28-ounce can Crushed tomatoes
  • 2 14–15-ounce cans Diced tomatoes
  • 2 15-ounce cans Kidney beans or a kidney and pinto bean mixture, drained and rinsed
  • 1 cup Beef broth or beer
Seasonings
  • 3 tablespoons Chili powder
  • 2 tablespoons Ground cumin
  • 2 teaspoons Smoked paprika
  • 1 teaspoon Dried oregano
  • 1 1/2 teaspoons, plus more to taste Kosher salt
  • 1/2 teaspoon Black pepper
  • 1/4-1/2 teaspoon, optional Cayenne pepper
  • 1-2 tablespoons, optional Worcestershire sauce

Method
 

Step-by-Step
  1. Heat a large Dutch oven or heavy pot over medium heat. Cook the diced bacon until browned and crisp, then transfer it to a plate and leave about 1–2 tablespoons of rendered fat in the pot.
  2. Add the ground beef and sausage to the pot. Cook, breaking the meat into small pieces, until no longer pink and thoroughly browned; work in batches if the pot is crowded, then drain excess fat if needed.
  3. Add the diced onion and green bell peppers. Cook for 5–7 minutes, until softened, then add the minced garlic and cook for about 30 seconds.
  4. Stir in the tomato paste, chili powder, cumin, smoked paprika, oregano, kosher salt, black pepper, and cayenne if using. Cook for 1 minute, stirring constantly, to toast the spices.
  5. Pour in the crushed tomatoes, diced tomatoes, beef broth or beer, and Worcestershire sauce if using. Add the cooked bacon and stir thoroughly, scraping up any browned bits from the bottom.
  6. Bring the chili to a gentle boil, then reduce the heat to low. Partially cover and simmer for 45–60 minutes, stirring occasionally.
  7. Add the drained beans during the final 20–30 minutes of cooking. Continue simmering until the beans retain their shape and the chili is thick, glossy, and well blended.
  8. Taste and adjust the salt, chili powder, cayenne, or broth as needed. Let the chili rest for 10–15 minutes before serving.

Notes

For the best flavor, refrigerate the finished chili overnight and reheat it gently the next day. Store leftovers refrigerated and use within 3–4 days, or freeze in airtight containers.
