- Heat the oven to 350°F (175°C) and line baking sheets with parchment paper. Make sure the softened butter is cool and pliable rather than melted.
- Cream the butter, granulated sugar, and packed light brown sugar until the mixture is light and smooth. Beat in the eggs one at a time, then mix in the vanilla extract.
- Whisk the flour, baking soda, and salt in a separate bowl. Gradually add the dry mixture to the butter mixture, mixing only until the flour disappears.
- Fold approximately 1 1/4 cups of the Valentine’s Day M&M candies into the dough. Reserve the remaining candies for pressing onto the cookie dough before baking and adding after baking if desired.
- Scoop rounded tablespoons or approximately 2-tablespoon portions of dough onto the prepared baking sheets, leaving space between portions for spreading. Press extra M&Ms onto the tops.
- Bake for 10–12 minutes, until the edges are lightly golden while the centers still appear soft. If the dough spreads too much, chill it for 20–30 minutes before baking.
- Cool the cookies on the baking sheet for about 5 minutes before transferring them to a wire rack. Press a few extra candies onto the warm cookies immediately after baking for a bright finish.
Notes
For the chewiest texture, remove the cookies while the centers still look slightly underbaked because they continue setting as they cool. Store cooled cookies in an airtight container.
