- Crumble the fully cooled cornbread into a large mixing bowl. Tear the white bread into small pieces and add it to the bowl.
- Melt the butter in a skillet over medium heat. Add the onion and celery, then sauté for about 8–10 minutes, stirring occasionally, until the vegetables are softened but not browned.
- Pour the sautéed vegetables and all of the melted butter into the bread mixture. Add the rubbed sage, poultry seasoning, salt, and black pepper, and stir until evenly distributed.
- Mix in the beaten eggs, taking care to turn the bread mixture thoroughly so the eggs are spread throughout.
- Gradually add the chicken broth, stirring after each addition. Use enough broth to make the mixture very moist but not soupy; it should look wetter than you think it needs to be because the bread absorbs liquid during baking.
- Transfer the mixture to a greased 9-by-13-inch baking dish and spread it into an even layer. Bake uncovered at 350°F for 35–45 minutes, until the center is set and the top is lightly browned.
Notes
Use day-old or slightly stale white bread and fully cooled cornbread to prevent a gummy texture. For a softer top, cover the baking dish for the first 25–30 minutes, then uncover it to finish. Homemade or low-sodium chicken broth gives you better control over the salt level.
