- Drain and rinse the black beans and black-eyed peas thoroughly. Drain the corn well so extra liquid does not make the dip watery.
- Add the beans, black-eyed peas, corn, red bell pepper, green bell pepper, tomatoes, red onion, jalapeno, and cilantro to a large mixing bowl.
- Whisk the olive oil, lime juice, red wine vinegar, sugar or honey, cumin, chili powder, salt, and black pepper in a separate bowl or measuring cup.
- Pour the dressing over the bean and vegetable mixture. Fold gently until the ingredients are evenly coated without crushing the beans or tomatoes.
- Cover and refrigerate for at least 30 minutes, although 1 hour is preferable for the fullest flavor.
- Fold in the diced avocado immediately before serving. Taste and adjust the salt, lime juice, or jalapeno heat as needed.
- Serve chilled or at cool room temperature with tortilla chips.
Notes
Rinse and drain the canned ingredients very well. Add avocado immediately before serving because it can brown and soften. Firm Roma or cherry tomatoes help create a sturdier dip.
