The Best Texas Caviar Recipe

A no-cook Texas caviar dip packed with beans, corn, crisp vegetables, fresh cilantro, and a bright lime-red wine vinaigrette. Serve it chilled or at cool room temperature with tortilla chips.

Ingredients
  

Bean and Vegetable Mixture
  • 1 15-ounce can black beans, drained and rinsed
  • 1 15-ounce can black-eyed peas, drained and rinsed
  • 1 1/2 cups whole-kernel corn, drained, or cooked corn
  • 1 cup red bell pepper, diced
  • 1 cup green bell pepper, diced
  • 1 cup cherry tomatoes, halved, or Roma tomatoes, diced
  • 1/2 cup red onion, finely diced
  • 1 jalapeno, seeded and finely diced
  • 1/2 cup fresh cilantro, chopped
  • 1 avocado, diced
Dressing
  • 1/3 cup extra-virgin olive oil
  • 1/4 cup fresh lime juice
  • 2 tablespoons red wine vinegar
  • 1 tablespoon granulated sugar or honey
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/4 teaspoon black pepper

Method
 

Step-by-Step
  1. Drain and rinse the black beans and black-eyed peas thoroughly. Drain the corn well so extra liquid does not make the dip watery.
  2. Add the beans, black-eyed peas, corn, red bell pepper, green bell pepper, tomatoes, red onion, jalapeno, and cilantro to a large mixing bowl.
  3. Whisk the olive oil, lime juice, red wine vinegar, sugar or honey, cumin, chili powder, salt, and black pepper in a separate bowl or measuring cup.
  4. Pour the dressing over the bean and vegetable mixture. Fold gently until the ingredients are evenly coated without crushing the beans or tomatoes.
  5. Cover and refrigerate for at least 30 minutes, although 1 hour is preferable for the fullest flavor.
  6. Fold in the diced avocado immediately before serving. Taste and adjust the salt, lime juice, or jalapeno heat as needed.
  7. Serve chilled or at cool room temperature with tortilla chips.

Notes

Rinse and drain the canned ingredients very well. Add avocado immediately before serving because it can brown and soften. Firm Roma or cherry tomatoes help create a sturdier dip.
