  • 1 15-ounce can Whole-kernel corn, drained
  • 1 15-ounce can Creamed corn, undrained
  • 1 cup Sour cream

  • 2 eggs Large eggs

  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper

Step-by-Step
  1. Heat the oven to 350°F (175°C) and grease a 9-by-13-inch casserole dish. A deep 8-by-8-inch dish may also be used for a thicker casserole.
  2. In a large mixing bowl, whisk together the melted butter, sour cream, and eggs until the mixture is smooth.
  3. Stir in the Jiffy corn muffin mix, drained whole-kernel corn, and undrained creamed corn. Add the salt and black pepper if desired.
  4. Mix only until the ingredients are combined. Do not overmix, since a gentle stir helps the casserole stay soft and tender.
  5. Pour the batter into the prepared dish and spread it evenly. Bake for 45–55 minutes, until the center is set, the edges are lightly golden, and the middle still looks moist.
  6. Remove the casserole from the oven and let it rest for 5–10 minutes. This short rest allows the center to firm up while keeping its creamy texture.

Notes

Drain the whole-kernel corn thoroughly, but do not drain the creamed corn because its moisture helps create the soft texture. Avoid overbaking. Optional variations include adding 1–2 tablespoons of sugar for a sweeter casserole or about 1 cup of shredded Cheddar cheese.
