Creamy pumpkin-cheesecake truffles made with graham crackers and coated in white chocolate. These easy no-bake treats make approximately 20–24 truffles.

Ingredients
  

Pumpkin Truffle Filling
  • 8 ounces (226 g) Cream cheese, softened
  • 1 cup (240 g) Plain pumpkin puree, not pumpkin-pie filling
  • 1 1/2 cups (about 150 g) Finely crushed graham crackers
  • 1 cup (120 g) Confectioners’ sugar
  • 1 teaspoon Pumpkin-pie spice
  • 1 teaspoon Vanilla extract
Coating and Garnish
  • 12–16 ounces (340–454 g) White chocolate or white candy melts
  • 1 teaspoon Shortening or coconut oil, optional
  • As needed for garnish Graham-cracker crumbs, cinnamon, or sprinkles

Method
 

Step-by-Step
  1. Beat the softened cream cheese until smooth. Mix in the pumpkin puree, confectioners’ sugar, pumpkin-pie spice, and vanilla, then stir in the finely crushed graham crackers until thick.
  2. Cover the bowl and refrigerate the mixture for 30–60 minutes, until firm enough to scoop and roll.
  3. Scoop approximately 1 tablespoon per truffle and roll into balls. Arrange them on a parchment-lined tray and chill for another 15–20 minutes if they feel soft.
  4. Melt the white chocolate or candy melts in the microwave in 15–30-second intervals, stirring after each interval. Stir in the shortening or coconut oil if the coating needs to be thinner.
  5. Dip each chilled truffle in the coating, let the excess drip away, and return it to the lined tray. Add crumbs, cinnamon, or sprinkles while the coating is still wet.
  6. Refrigerate the coated truffles for 15–30 minutes, until the shell is set. Store them in an airtight container in the refrigerator for up to 5 days.

Notes

Blot or drain watery pumpkin puree before mixing so the filling stays thick. White candy melts are usually easier to dip with than white chocolate chips. Undipped centers can be frozen for up to about 1 month; thaw them in the refrigerator before coating.
