  • 1 crust Unbaked 9-inch pie crust
  • 15 ounces (425 g) Pure pumpkin purée, not pumpkin pie filling
  • 3 eggs Large eggs
  • 3/4 cup (150 g) Granulated sugar
  • 12 fluid ounces (354 ml) Evaporated milk
  • 1 1/2 teaspoons Ground cinnamon
  • 1/2 teaspoon Ground ginger
  • 1/4 teaspoon Ground nutmeg
  • 1/8 teaspoon Ground cloves
  • 1/2 teaspoon Fine salt
  • 1 teaspoon, optional Vanilla extract

Method
 

Step-by-Step
  1. Heat the oven to 425°F (220°C) and place the unbaked crust in a 9-inch pie plate.
  2. Whisk pumpkin, sugar, salt, cinnamon, ginger, nutmeg, cloves, and optional vanilla in a large bowl.
  3. Whisk in the eggs just until blended, then gradually mix in the evaporated milk until smooth. Avoid incorporating excessive air.
  4. For an especially smooth filling, strain the custard through a fine-mesh sieve before pouring it into the crust.
  5. Pour the custard into the unbaked crust and bake at 425°F for 15 minutes.
  6. Reduce the oven temperature to 350°F (175°C) and bake for about 40–50 minutes more, until the edges are set and the center has a slight wobble.
  7. Transfer the pie to a rack and cool completely for about 2 hours before slicing. Refrigerate leftovers.

Notes

Use pure pumpkin purée rather than pumpkin pie filling, which already contains sugar and spices. Shield the crust edge with a pie shield or foil if it browns too quickly. The center should reach approximately 175–180°F (79–82°C), but do not bake until the entire center is firm because it continues setting as it cools.
