  • 1/2 teaspoon Garlic powder
  • 1/4 teaspoon Ground black pepper

  • 4 pork chops Pork chops, bone-in or boneless, preferably 3/4- to 1-inch thick

Step-by-Step
  1. Whisk the olive oil, soy sauce, lemon juice, brown sugar, Worcestershire sauce, Italian seasoning, garlic powder, and black pepper in a bowl or resealable bag until the brown sugar is mostly dissolved.
  2. Add the pork chops and turn them several times so every surface is thoroughly coated with the marinade.
  3. Cover the bowl or seal the bag and refrigerate for at least 1 hour. For the best flavor, marinate for 4 to 8 hours, turning the chops once if possible; do not exceed about 12 hours.
  4. Preheat the grill to medium-high heat, approximately 400-450°F, and lightly oil the grill grates to help prevent sticking.
  5. Remove the pork chops from the marinade and discard the used marinade. Pat the chops lightly dry with paper towels so they brown properly.
  6. Grill the pork chops for approximately 4-5 minutes per side, adjusting the time for thickness and whether the chops are bone-in or boneless.
  7. Check the thickest part with an instant-read thermometer and cook until it reaches 145°F.
  8. Transfer the cooked chops to a plate, tent loosely with foil, and rest for 5 minutes before serving.

Notes

Use internal temperature rather than appearance to judge doneness. Pull the pork at 145°F and let it rest for 5 minutes for a juicy result. Refrigerate leftovers promptly and use them within 3 to 4 days.
