- Heat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Beat the softened butter, peanut butter, granulated sugar, and brown sugar until smooth and creamy. Beat in the egg and vanilla.
- Whisk the flour, baking soda, and salt in a separate bowl. Gradually mix the dry ingredients into the peanut butter mixture just until combined.
- If the dough is very soft, chill it for about 30 minutes. Shape the dough into approximately 1-inch balls, roll each in extra granulated sugar, and place them about 2 inches apart on the prepared sheets.
- Bake for 10–12 minutes, until the cookies look set and are lightly golden around the edges. Immediately press one unwrapped chocolate kiss into the center of each cookie.
- Cool the cookies on the baking sheet for 5 minutes, then transfer them to a rack. Allow the chocolate to firm as the cookies cool.
Notes
Use regular creamy peanut butter rather than natural peanut butter because natural varieties can separate and make the dough oily or crumbly. Do not overbake; the centers should remain soft. For faster chocolate setting, refrigerate the finished cookies briefly.
