  • 8 medium peaches Fresh peaches, peeled if desired, pitted, and sliced
  • 1/2 cup Granulated sugar
  • 1/4 cup All-purpose flour
  • 2 tablespoons Fresh lemon juice
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Ground cinnamon
Crisp Topping
  • 1 cup Old-fashioned rolled oats
  • 1 cup All-purpose flour
  • 1 cup Packed light brown sugar
  • 1/2 teaspoon Ground cinnamon
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter, melted

Step-by-Step
  1. Heat the oven to 350°F (175°C). Lightly butter or spray a 9-by-13-inch baking dish.
  2. Combine the sliced peaches with the granulated sugar, flour, lemon juice, vanilla extract, and cinnamon. Let the mixture stand for about 5 minutes.
  3. Spread the peach mixture evenly in the prepared baking dish.
  4. In a separate bowl, mix the oats, flour, brown sugar, cinnamon, and salt.
  5. Stir in the melted butter until the topping forms coarse, moist crumbs.
  6. Scatter the topping evenly over the peaches.
  7. Bake for 40–45 minutes, until the fruit bubbles around the edges and the topping is browned and crisp.
  8. Cool for at least 10–15 minutes before serving. Serve warm with vanilla ice cream or whipped cream.

Notes

Choose ripe but still firm peaches for the best texture. Peeling is optional. Use old-fashioned rolled oats rather than quick oats for a crunchier topping, and allow the crisp to rest briefly after baking so the juices thicken.
