- Stir the warm water, honey, and active dry yeast together in a large bowl. Let the mixture stand for 5-10 minutes, until foamy.
- Mix in the melted butter or neutral oil, whole-wheat flour, bread flour or all-purpose flour, and salt until a shaggy dough forms.
- Knead with a dough hook for 6-8 minutes or by hand for 8-10 minutes. The dough should be soft and slightly tacky, but not wet.
- Place the dough in a lightly greased bowl, cover, and let rise in a warm, draft-free place for 60-90 minutes, or until doubled in size.
- Gently deflate the dough, shape it into a loaf, and place it in a greased 9 x 5-inch loaf pan. Cover and let rise for 30-45 minutes, until the dough crowns about 1 inch above the pan.
- Bake at 350°F (175°C) for 30-35 minutes. The loaf should be deeply golden and register approximately 190-200°F internally.
- Cool in the pan for 10 minutes, then transfer the loaf to a wire rack. Cool completely for at least 45-60 minutes before slicing.
Notes
Do not add too much flour during kneading. Slightly tacky dough produces a softer loaf, while excess flour can make the bread dense. For the best texture, allow both rises to finish fully and check the water temperature carefully so it does not kill the yeast.
