Tender biscuit-style shortcakes are split and filled with syrupy macerated strawberries and vanilla whipped cream. This traditional homemade dessert makes 8 generous servings and is best assembled shortly before serving.

Ingredients
  

Strawberry Filling
  • 1 1/2 pounds Fresh strawberries, hulled and sliced
  • 1/4 cup Granulated sugar
  • 1 teaspoon Fresh lemon juice, optional
Shortcakes
  • 2 cups (240–250 g) All-purpose flour
  • 1/4 cup (50 g) Granulated sugar
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Fine salt
  • 1/2 cup (113 g) Cold unsalted butter, cut into small cubes
  • 2/3 cup (160 ml) Cold heavy cream or whole milk
  • 1 teaspoon Vanilla extract
Whipped Cream
  • 1 cup (240 ml) Cold heavy whipping cream
  • 2 tablespoons Confectioners’ sugar or granulated sugar
  • 1 teaspoon Vanilla extract

Method
 

Step-by-Step
  1. Combine the sliced strawberries, sugar, and optional lemon juice in a bowl. Stir gently and let them stand at room temperature for 20–30 minutes, stirring once or twice, until glossy juices collect.
  2. Heat the oven to 425°F (220°C) and line a baking sheet with parchment. Whisk the flour, sugar, baking powder, and salt together in a large bowl.
  3. Cut the cold butter into the dry ingredients with a pastry blender or your fingertips until coarse crumbs form, leaving a few pea-sized pieces. Stir in the cold cream or milk and vanilla just until a soft dough comes together.
  4. Turn the dough onto a lightly floured surface and pat it to about 3/4-inch thickness. Cut 8 rounds or divide the dough into 8 rough portions and shape them by hand.
  5. Transfer the shortcakes to the prepared baking sheet. Brush the tops with a little cream and sprinkle with sugar if desired, then bake for 15–18 minutes until puffed and lightly golden.
  6. Beat the cold whipping cream, sugar, and vanilla to medium or stiff peaks, stopping before the cream becomes grainy. Cool the shortcakes for about 5–10 minutes.
  7. Split each shortcake horizontally and spoon strawberries and their juices over the bottom half. Add whipped cream, replace the top, and finish with more berries and cream.

Notes

Keep the butter and liquid cold, mix the dough minimally, and macerate the berries shortly before serving. Chill the bowl and beaters for the best whipped cream, and stop beating as soon as medium-stiff peaks form.
