  • 1 10-ounce can Diced tomatoes with green chiles
  • 1/2 medium Yellow or white onion, roughly chopped
  • 1 jalapeño Jalapeño, roughly chopped
  • 1-2 cloves Garlic cloves
  • 1/2 cup Fresh cilantro leaves
  • 1 lime, about 2 tablespoons juice Fresh lime juice
Seasonings
  • 1/2 teaspoon Ground cumin
  • 1/2 teaspoon, plus more to taste Salt
  • 1/4 teaspoon Granulated sugar, optional

Method
 

Step-by-Step
  1. Add the whole peeled tomatoes with their juices, diced tomatoes with green chiles, onion, jalapeño, garlic, cilantro, lime juice, cumin, salt, and optional sugar to a food processor or blender.
  2. Pulse several times until the salsa is combined and still slightly chunky. Stop blending before the mixture becomes completely smooth or watery.
  3. Taste the salsa and adjust with more salt, lime juice, or jalapeño as desired. Refrigerate for at least 20 to 30 minutes before serving.

Notes

Use canned whole tomatoes for consistent, restaurant-style flavor, especially when fresh tomatoes are out of season. If the salsa is thinner than desired, drain some tomato juice and pulse briefly again. Store covered in the refrigerator; this no-cook salsa is not intended for room-temperature canning.
