Peach Filling
  • 5–6 peaches, about 4 cups Ripe peaches, peeled, pitted, and sliced
  • 1/4 cup Granulated sugar
  • 1/4 cup Packed light brown sugar
  • 1 tablespoon Lemon juice
  • 1/2 teaspoon Ground cinnamon
  • 1/8 teaspoon Ground nutmeg
  • 1 teaspoon Cornstarch
  • 1 teaspoon, optional Vanilla extract
Biscuit Topping
  • 1 cup All-purpose flour
  • 1/4 cup Granulated sugar
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 6 tablespoons Cold unsalted butter, cut into small pieces
  • 1/4 cup Boiling water
  • 2–3 tablespoons Granulated sugar, for sprinkling

Step-by-Step
  1. Heat the oven to 425°F (220°C), then lightly butter an 8-inch square or similar 2-quart baking dish.
  2. Combine the sliced peaches, granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, cornstarch, and optional vanilla. Transfer the fruit mixture to the prepared baking dish.
  3. Whisk the flour, sugar, baking powder, and salt in a bowl. Cut in the cold butter until coarse crumbs form, then stir in the boiling water just until a soft, uneven dough forms.
  4. Drop spoonfuls of dough over the peaches, leaving a few gaps for steam to escape. Sprinkle the topping with the remaining 2–3 tablespoons of sugar.
  5. Bake for 35–45 minutes, until the peaches are bubbling and the biscuit topping is golden brown. Loosely cover with foil if the topping browns too quickly.
  6. Let the cobbler rest for at least 10–15 minutes before serving so the fruit juices can thicken. Serve warm with vanilla ice cream or lightly sweetened whipped cream.

Notes

Use ripe but still-firm peaches for the best texture. Frozen peaches may be used if thawed and well drained. Keep the butter cold, avoid overmixing the topping, and let the baked cobbler rest before serving.
