Chocolate Cookie Crust
  • 1 1/4 cups Chocolate wafer-cookie crumbs

Chocolate Filling
  • 4 ounces Semisweet or bittersweet chocolate, finely chopped
  • 1 cup Unsalted butter, softened
  • 1 1/2 cups Granulated sugar
  • 4 eggs Large eggs
  • 1 teaspoon Pure vanilla extract
  • 1/4 teaspoon Salt
Whipped Cream Topping
  • 1 cup Cold heavy whipping cream
  • 2 tablespoons Powdered sugar
  • 1/2 teaspoon Vanilla extract
  • as needed Chocolate curls or finely grated chocolate

Method
 

Step-by-Step
  1. Preheat the oven to 350°F (175°C). Combine the chocolate wafer crumbs, melted butter, granulated sugar, and salt, then press the mixture firmly over the bottom and up the sides of a 9-inch pie plate.
  2. Bake the crust for 10–12 minutes, then place it on a rack and cool completely before filling. A prepared chocolate-cookie crust or standard prebaked pastry crust may be used instead.
  3. Melt the chopped chocolate gently in a microwave using short intervals, stirring between each one, or melt it over a double boiler. Stir until smooth and let it cool until barely warm.
  4. Beat the softened butter and granulated sugar on medium-high speed for 4–5 minutes, scraping the bowl occasionally, until very pale and fluffy. Add the cooled chocolate, vanilla, and salt, and beat until evenly combined.
  5. Add the eggs one at a time, beating for 4–5 minutes after each addition. This extended mixing creates the airy, silky texture that defines classic French silk pie.
  6. Spread the finished chocolate filling into the completely cooled crust and smooth the top. Refrigerate for at least 4 hours, preferably overnight, until firm.
  7. Whip the cold heavy cream, powdered sugar, and vanilla to medium-stiff peaks. Spread or pipe the whipped cream over the chilled pie, then finish with chocolate curls or finely grated chocolate.

Notes

Use room-temperature butter and eggs, but cool the melted chocolate before adding it to the butter mixture. Because the classic filling contains raw eggs, use pasteurized eggs or a cooked-egg method when serving young children, pregnant guests, older adults, or anyone immunocompromised. Store the covered pie in the refrigerator and serve chilled.
