- Season the 1-inch chicken pieces with kosher salt and black pepper. Set up one bowl with the beaten eggs and another with the cornstarch.
- Dip each chicken piece into the beaten egg, allowing excess to drip away, then coat thoroughly in cornstarch. Make sure every side is covered for the crispiest crust.
- Heat 1/3 to 1/2 cup neutral oil in a large skillet over medium-high heat. Fry the chicken in batches for approximately 3 to 4 minutes per side, until golden brown and the internal temperature reaches 165°F.
- Drain the cooked chicken on a rack or paper towels. Do not overcrowd the skillet, since working in batches helps the coating brown instead of steam.
- Whisk together the orange juice, orange zest, sugar, soy sauce, rice vinegar, garlic, and ginger. Pour the sauce into a clean skillet or saucepan and bring it to a simmer.
- Stir together 1 tablespoon cornstarch and 2 tablespoons cold water. Whisk the slurry into the simmering sauce and cook for 1 to 2 minutes, until glossy and thickened.

Notes
