- Measure the chili powder, cumin, paprika, garlic powder, onion powder, salt, black pepper, and optional cayenne into a small bowl.
- Whisk or stir thoroughly until every spice is evenly distributed and no clumps remain.
- Use the seasoning immediately, or transfer it to an airtight jar and label it with the date.
- For a typical pot of chili, add about 3 to 5 tablespoons, depending on the amount of chili and your preferred intensity.
- Stir the blend into browned meat, sautéed vegetables, tomatoes, broth, or beans, then simmer the chili for 20 to 30 minutes or longer so the spices fully flavor the dish.

For deeper flavor, briefly bloom the seasoning in the pot with cooked meat and aromatics before adding liquid. Store the dry blend in an airtight container in a cool, dark cupboard and use it within about 6 months for the best flavor.
