  • 1/2 cup (100 g) Granulated sugar
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Fine salt
  • 1 teaspoon Ground cinnamon
  • 1/2 cup (113 g) Unsalted butter, melted and slightly cooled
  • 2 eggs Large eggs
  • 1/2 cup (120 ml) Milk
  • 1 teaspoon Vanilla extract
  • 1 1/2 cups, approximately 2 medium apples Firm apples, peeled and finely diced

Step-by-Step
  1. Heat the oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners or grease it thoroughly.
  2. Whisk the flour, sugar, baking powder, salt, and cinnamon together in a large bowl.
  3. In a separate bowl, whisk the melted, slightly cooled butter with the eggs, milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined. A few small lumps are fine, so do not continue mixing once the flour is moistened.
  5. Fold in the peeled, finely diced apples with a spatula, distributing them evenly without crushing the pieces.
  6. Divide the batter among the muffin cups, filling each about three-quarters full. Bake immediately for 18–22 minutes, until lightly golden and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  7. Cool the muffins in the pan for about 5 minutes, then transfer them to a wire rack. Serve warm or allow them to cool completely before storing.

Notes

Choose firm apples such as Granny Smith, Honeycrisp, Braeburn, or Pink Lady. Avoid overmixing, and bake immediately after filling the cups for the best texture and taller tops.
