- Heat the oven to 350°F. Line a rimmed baking sheet or loaf pan with foil and lightly grease it.
- Combine the breadcrumbs and milk in a large bowl. Let them stand for a few minutes so the crumbs soften into a panade.
- Add the ground beef, ground pork, egg, onion, garlic, Worcestershire sauce, kosher salt, black pepper, and 1/4 cup ketchup.
- Mix gently with your hands or a fork just until the ingredients are combined. Do not overmix.
- Shape the mixture into a loaf about 8 inches long and 4 inches wide. Place it on the prepared pan, preferably as a free-form loaf so excess fat can drain away.
- Bake for about 40 minutes. Stir together the glaze ingredients, then spread the glaze evenly over the meatloaf.
- Continue baking for 15-25 minutes, until the center reaches 160°F on an instant-read thermometer. Rest for 10 minutes before slicing.
Notes
Soaking the breadcrumbs in milk keeps the meatloaf moist and tender. Mix only until incorporated, use an instant-read thermometer for accuracy, and refrigerate leftovers promptly.
