  • 1 tablespoon Worcestershire sauce

  • 1/2 teaspoon Black pepper
  • 1/4 cup Ketchup
Glaze
  • 1/2 cup Ketchup
  • 1/4 cup Packed light brown sugar
  • 1 tablespoon Apple cider vinegar

Step-by-Step
  1. Heat the oven to 350°F. Line a rimmed baking sheet or loaf pan with foil and lightly grease it.
  2. Combine the breadcrumbs and milk in a large bowl. Let them stand for a few minutes so the crumbs soften into a panade.
  3. Add the ground beef, ground pork, egg, onion, garlic, Worcestershire sauce, kosher salt, black pepper, and 1/4 cup ketchup.
  4. Mix gently with your hands or a fork just until the ingredients are combined. Do not overmix.
  5. Shape the mixture into a loaf about 8 inches long and 4 inches wide. Place it on the prepared pan, preferably as a free-form loaf so excess fat can drain away.
  6. Bake for about 40 minutes. Stir together the glaze ingredients, then spread the glaze evenly over the meatloaf.
  7. Continue baking for 15-25 minutes, until the center reaches 160°F on an instant-read thermometer. Rest for 10 minutes before slicing.

Soaking the breadcrumbs in milk keeps the meatloaf moist and tender. Mix only until incorporated, use an instant-read thermometer for accuracy, and refrigerate leftovers promptly.
