- Heat the oven to 450°F (230°C). Line a baking sheet with parchment paper, or leave it ungreased.
- Whisk the flour, baking powder, and salt together in a large bowl until evenly combined.
- Add the cold cubed butter and cut it into the flour with a pastry cutter or your fingertips until coarse crumbs form, leaving a few pea-sized butter pieces.
- Pour in the cold milk and stir just until a soft, slightly shaggy dough forms. Add a small splash of milk only if the dough seems unusually dry, and do not overmix.
- Turn the dough onto a lightly floured surface and pat or gently roll it to about 3/4-inch thickness.
- Cut the dough with a floured 2 1/2-inch round cutter, pressing straight down without twisting. Gather and gently pat any scraps if needed.
- Place the biscuits close together for softer sides, or about 1 inch apart for crisper edges.
- Bake for 10–12 minutes, until the biscuits are puffed and lightly golden. Serve warm.
Notes
Keep the butter and milk very cold, and handle the dough as little as possible. For taller biscuits, fold the dough in half two or three times before cutting. Store cooled biscuits in an airtight container and reheat gently before serving.
