Ingredients

Main Ingredients
  • 2 pounds Pork tenderloin
Garlic Herb Coating
  • 2 tablespoons Olive oil
  • 2 tablespoons Minced garlic
  • 1 teaspoon Kosher salt or sea salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Italian seasoning

Method

Step-by-Step
  1. Heat the oven to 375°F. Pat the pork tenderloin dry with paper towels and remove any visible silver skin.
  2. In a small bowl, mix the olive oil, minced garlic, salt, black pepper, paprika, and Italian seasoning until evenly combined.
  3. Rub the garlic mixture over every side of the pork tenderloin. Place it in a lightly greased baking dish or on a small rimmed sheet pan.
  4. Bake for about 25–35 minutes, checking the thickest part with an instant-read thermometer. Remove the pork when it reaches 145°F.
  5. Tent the tenderloin loosely with foil and let it rest for 5–10 minutes. Slice across the grain and serve while warm.

Notes

Use internal temperature rather than time alone because pork tenderloin is lean and can dry out if overcooked. For extra browning, sear the seasoned tenderloin in a hot skillet for 2–3 minutes per side before baking. Pork tenderloin is smaller and cooks faster than pork loin.
