The Best 6-Inch Birthday Cake

Ingredients
  

Vanilla Cake
  • 1 1/4 cups (150 g) All-purpose flour
  • 1 1/4 teaspoons Baking powder
  • 1/4 teaspoon Fine salt
  • 1/2 cup (113 g) Unsalted butter, softened
  • 3/4 cup (150 g) Granulated sugar
  • 2 large Large eggs, room temperature
  • 1 teaspoon Pure vanilla extract
  • 1/2 cup (120 ml) Whole milk, room temperature
Optional Birthday Addition
  • 1/4 cup (about 40 g) Rainbow jimmies or sprinkles
Vanilla Buttercream
  • 1/2 cup (113 g) Unsalted butter, softened
  • 2 cups (240 g) Confectioners’ sugar, sifted
  • 1 teaspoon Vanilla extract
  • 1-2 tablespoons Heavy cream or milk
  • 1 pinch Fine salt

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Grease two 6-inch round cake pans and line the bottoms with parchment.
  2. Whisk the flour, baking powder, and salt together in a medium bowl.
  3. Beat the softened butter and granulated sugar for 2–3 minutes, until pale and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  5. Add the dry ingredients in two or three additions, alternating with the milk. Mix only until combined, then fold in the sprinkles if using.
  6. Divide the batter evenly between the prepared pans. For matching layers, weigh the batter and place approximately half in each pan.
  7. Bake for 25–30 minutes, until the tops spring back lightly and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Cool the cakes in their pans for 10 minutes. Turn them out onto a rack and cool completely.
  9. For the buttercream, beat the softened butter until smooth. Gradually add the sifted confectioners’ sugar, then mix in the vanilla, salt, and enough cream or milk to make a smooth, spreadable frosting.
  10. Level the cakes if needed, fill and frost with the buttercream, and decorate with additional sprinkles.

Notes

Use room-temperature butter, eggs, and milk for the best emulsion and crumb. Do not overmix after adding flour. Cool the cake layers completely before frosting. Store covered at room temperature for a short serving period or refrigerate for longer storage, bringing the cake toward room temperature before serving.
