Tall and Creamy New York Cheesecake

A classic tall New York cheesecake with a buttery graham cracker crust and an exceptionally creamy full-fat cream cheese filling. The cheesecake is baked at two temperatures and chilled thoroughly for clean slices and rich flavor.

Ingredients
  

Graham Cracker Crust
  • 5 ounces Graham crackers, about 10 whole crackers
  • 2 tablespoons Granulated sugar
  • 5 tablespoons Unsalted butter, melted
Cheesecake Filling
  • pounds Full-fat cream cheese, cut into pieces and softened
  • cups Granulated sugar
  • teaspoon Table salt
  • 1 tablespoon Vanilla extract
  • 2 teaspoons Fresh lemon juice
  • 6 Large eggs
  • 2 Large egg yolks
  • ¼ cup Heavy cream

Method
 

Step-by-Step
  1. Position an oven rack in the lower-middle position and heat the oven to 500°F. Butter a 9-inch springform pan.
  2. Process the graham crackers and sugar into fine crumbs. Stir in the melted butter, press the mixture evenly over the bottom of the prepared pan, and bake for about 13 minutes, until fragrant and lightly browned; cool while preparing the filling.
  3. Beat the softened cream cheese until smooth. Add the sugar and salt, then beat until fully incorporated.
  4. Mix in the vanilla and lemon juice. Add the eggs and yolks one at a time, mixing just until each is combined, then add the heavy cream and mix briefly.
  5. Pour the filling over the cooled crust and bake at 500°F for 10 minutes.
  6. Without opening the oven door, reduce the temperature to 200°F and continue baking for approximately 1½ hours. The edges should be set while the center still jiggles slightly.
  7. Turn off the oven and leave the cheesecake inside for about 1 hour. The oven door may be propped open slightly during this cooling period.
  8. Remove the cheesecake, cool it to room temperature, then refrigerate for at least 3 hours, preferably overnight, before unmolding and serving.

Notes

Use full-fat cream cheese at room temperature, mix only as much as needed, and do not bake until the center is completely firm. For clean slices, use a thin knife warmed and wiped between cuts.
