Swiss Roll Cookies-and-Cream Cake

A no-bake ice cream cake built with chocolate Swiss Cake Rolls, cookies-and-cream ice cream, crushed chocolate sandwich cookies, hot fudge, and whipped topping. Freeze until firm, garnish generously, and slice with a warm knife.

Ingredients
  

Cake and Filling
  • 12 rolls, about 10.5-13 ounces total Packaged chocolate Swiss Cake Rolls, such as Little Debbie Swiss Cake Rolls
  • 1 1/2 quarts Cookies-and-cream ice cream, slightly softened
  • 18-24 cookies Chocolate sandwich cookies, divided
  • 3/4 cup Prepared hot-fudge sauce, plus extra for serving
Topping
  • 8 ounces Frozen whipped topping, thawed
Topping Alternative
  • 1 1/2 cups Cold heavy cream
  • 3 tablespoons Powdered sugar
Garnish
  • 1/4 cup, optional Mini chocolate chips or chocolate shavings

Method
 

Step-by-Step
  1. Line the bottom of a 9-inch springform pan with parchment paper and lightly grease the sides, or add a parchment strip around the inside edge.
  2. Unwrap the 12 Swiss rolls and cut each into slices about 1/2 inch thick. Pack the slices over the bottom of the pan and upright around the sides, keeping the chocolate coating facing outward; trim pieces as needed.
  3. Crush 12–16 chocolate sandwich cookies into coarse crumbs and reserve the remaining cookies for garnish.
  4. Spread about half of the slightly softened cookies-and-cream ice cream over the Swiss-roll base. Drizzle with about 1/3 cup hot-fudge sauce and sprinkle with half of the cookie crumbs.
  5. Add the remaining ice cream and smooth the top. Cover and freeze for at least 4 hours, or overnight, until the cake is firm.
  6. Let the frozen cake stand at room temperature for 5–10 minutes, then release the springform ring. Spread or pipe thawed whipped topping over the top and add cookie crumbs, chopped cookies, chocolate chips or shavings, and extra hot fudge.
  7. Slice with a warm knife and serve immediately. If using homemade whipped cream, whip the cold heavy cream with powdered sugar until it holds firm peaks before decorating.

Notes

The ice cream should be spreadable but not liquid-soft. Freeze the assembled cake overnight when possible, keep it frozen until serving, and warm the knife between cuts for neat slices.
