- Heat the oven to 425°F. Toss the cubed sweet potatoes with 2 tablespoons olive oil, 1/2 teaspoon kosher salt, and 1/4 teaspoon freshly ground black pepper.
- Spread the sweet potatoes in a single layer on a rimmed baking sheet. Roast for 25 to 30 minutes, turning once, until browned around the edges and tender when pierced with a fork.
- While the sweet potatoes roast, whisk together 3 tablespoons olive oil, apple cider vinegar, maple syrup, Dijon mustard, garlic, 1/4 teaspoon kosher salt, and 1/8 teaspoon black pepper.
- Let the roasted sweet potatoes cool for about 10 minutes. This keeps the greens from wilting immediately when the warm potatoes are added.
- Combine the arugula or mixed greens, red onion, feta, pecans, cranberries, and warm or room-temperature sweet potatoes in a large bowl. Toss with the dressing just before serving.
Notes
Do not crowd the baking sheet, or the sweet potatoes may steam instead of browning. Toast pecans in a dry skillet over medium heat for 3 to 5 minutes. For make-ahead serving, keep the dressing separate and toss immediately before eating.
