Peach Filling
  • 6 cups Ripe peaches, peeled and sliced
  • 1/3 cup Granulated sugar
  • 2 tablespoons All-purpose flour or cornstarch
  • 1 tablespoon Fresh lemon juice
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Ground cinnamon
  • 1/8 teaspoon Ground nutmeg, optional
  • 1/4 teaspoon Salt
Crumble Topping
  • 1 cup All-purpose flour
  • 1/2 cup Old-fashioned rolled oats
  • 1/2 cup Packed light brown sugar
  • 1/2 teaspoon Ground cinnamon
  • 1/4 teaspoon Salt
  • 8 tablespoons Unsalted butter, cold and cubed
  • 1/2 cup Chopped pecans, optional

Method
 

Step-by-Step
  1. Heat the oven to 375°F and lightly butter an 8-inch square baking dish or similar 2-quart dish.
  2. Peel and slice the peaches. If they are especially juicy, let the slices drain for a few minutes before mixing the filling.
  3. Combine the peaches with granulated sugar, flour or cornstarch, lemon juice, vanilla, cinnamon, optional nutmeg, and salt.
  4. Transfer the peach mixture to the prepared baking dish and spread it evenly.
  5. Mix the flour, oats, brown sugar, cinnamon, and salt for the topping. Cut in the cold butter until coarse crumbs form, then stir in pecans if using.
  6. Scatter the crumble mixture evenly over the peaches.
  7. Bake for 40–50 minutes, until the topping is golden brown and the peach filling bubbles around the edges.
  8. Cool for at least 10–15 minutes before serving so the juices can thicken slightly.

Notes

Use ripe but still firm peaches for the best texture. If using frozen peaches, thaw and drain them first. For very juicy peaches, choose cornstarch instead of flour. Place the baking dish on a rimmed sheet pan to catch any bubbling overflow.
