- Pat the chicken dry and season it with kosher salt and black pepper.
- Whisk together the pineapple juice, soy sauce, brown sugar, vinegar, grated ginger, and minced garlic. In a separate bowl, whisk the cornstarch with cold water until smooth.
- Heat 1 tablespoon oil in a large skillet over medium-high heat. Sear the chicken in a single layer, working in batches if needed, for 5–7 minutes until browned and nearly cooked through, then transfer it to a plate.
- Add the remaining oil to the skillet and cook the onion and red bell pepper for 3–4 minutes, until slightly softened.
- Add the pineapple and sauce mixture, then bring it to a simmer. Stir in the cornstarch slurry and cook for 1–2 minutes until the sauce is glossy and thickened.
- Return the chicken to the skillet and simmer for 2–3 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Garnish with sliced green onions and optional sesame seeds. Serve hot with steamed rice or noodles.
Notes
Chicken thighs remain especially moist, but chicken breasts are also suitable. Reserve canned pineapple juice for the sauce. For variations, substitute honey for the brown sugar in an equal amount, add red pepper flakes or sriracha for heat, or finish with 1 tablespoon toasted sesame oil.
