- Heat the oven to 350°F (175°C) and line one or two baking sheets with parchment paper.
- In a large bowl, stir together the sweetened shredded coconut, sweetened condensed milk, egg whites, vanilla extract, and salt until evenly combined.
- Drop the mixture by rounded tablespoonfuls or use a small cookie scoop. Arrange the portions about 2 inches apart on the prepared baking sheets.
- Bake for 12 to 15 minutes, until the tops and edges are lightly golden while the centers still look soft.
- Cool the macaroons on the baking sheet for about 1 minute, then transfer them to a wire rack to finish cooling for 5 to 10 minutes.
Notes
Use sweetened shredded coconut rather than finely ground desiccated coconut for the best moist, chewy texture. Do not overbake; the centers firm as the cookies cool. For a chocolate variation, dip or drizzle completely cooled macaroons with melted semisweet or dark chocolate.
