Summer Berry Trifle

A fresh, easy no-cook dessert layered with Madeira cake, mixed summer berries, vanilla custard, and softly whipped cream. Chill it for at least 2 hours before serving for the best texture and flavor.

Ingredients
  

Cake and Fruit Layers
  • 1 cake, about 450 g / 1 lb Madeira cake or pound cake, cut into 2.5 cm / 1-inch cubes
  • 200 g Strawberries, hulled and sliced
  • 150 g Raspberries
  • 150 g Blueberries
  • 150 ml Elderflower cordial, orange juice, or berry juice
Custard and Cream
  • 500 ml Ready-made vanilla custard
  • 300 ml Cold heavy cream or double cream
  • 2 tablespoons Icing sugar or powdered sugar
  • 1 teaspoon Vanilla extract
Optional Additions
  • 2-3 tablespoons Berry jam, loosened with a little juice
  • 2 tablespoons Raspberry liqueur, sherry, or Grand Marnier
  • As needed Fresh mint and extra berries for decoration

Method
 

Step-by-Step
  1. Hull and slice the strawberries, then combine them with the raspberries and blueberries. Let the mixed berries stand for 10–15 minutes if desired so their juices develop.
  2. Place half of the cake cubes in the bottom of a large glass trifle dish. Drizzle with half of the cordial or juice, using just enough to moisten the cake without saturating it.
  3. Spoon about half of the mixed berries over the cake, followed by half of the vanilla custard. Spread the layers gently so the glass shows clear bands of cake, fruit, and custard.
  4. Repeat with the remaining cake cubes, cordial or juice, berries, and custard. If using berry jam, loosen it with a little juice and spread it over the cake before adding the fruit.
  5. Whip the cold cream with the icing sugar and vanilla extract until soft-to-medium peaks form. Spread or pipe the cream over the top of the trifle.
  6. Decorate with reserved berries and fresh mint if using. Cover and refrigerate for at least 2 hours before serving, and preferably serve the trifle the same day or within 24 hours.

Notes

Add the cordial, juice, or optional liqueur gradually because the cake should be moist and flavorful rather than wet. For advance preparation, assemble the cake, fruit, and custard layers first, then add the whipped cream and delicate garnish close to serving. Stop whipping when soft-to-medium peaks form to prevent a dense, grainy topping.
