Stuffed Chicken Thighs with Prosciutto, Mozzarella, and Quick Tomato Sauce

Boneless chicken thighs are rolled around prosciutto, fresh mozzarella, and basil, browned until golden, then baked in a quick tomato sauce. Serve this comforting dinner with pasta, polenta, mashed potatoes, crusty Italian bread, or a green salad.

Ingredients
  

Chicken
  • 8 about 2 pounds total Boneless, skinless chicken thighs
  • 8 about 4 ounces Thin prosciutto slices
  • 8 ounces Fresh mozzarella, cut into 8 thick sticks or slices
  • 1/4 cup Fresh basil, chopped, optional
  • 1 teaspoon, divided Kosher salt
  • 1/2 teaspoon Freshly ground black pepper
  • 2 tablespoons Olive oil
Quick Tomato Sauce
  • 1 tablespoon Olive oil
  • 1 small Small yellow onion, finely chopped
  • 2 cloves Garlic cloves, minced
  • 1 28-ounce can Whole peeled or crushed tomatoes
  • 1/2 teaspoon Dried oregano
  • 1/4 teaspoon Red pepper flakes, optional
  • 1/2 teaspoon, or to taste Kosher salt
  • 1/4 teaspoon Black pepper
  • 1/4 cup Dry white wine or water, optional

Method
 

Instructions
  1. Heat the oven to 375°F. If needed, lightly pound the chicken thighs so they have an even thickness, then season both sides with the divided kosher salt and freshly ground black pepper.
  2. Pat the fresh mozzarella dry. Place one prosciutto slice and one mozzarella stick or thick slice in the center of each chicken thigh, adding a little chopped basil if desired; roll each thigh tightly around the filling and secure it with a toothpick.
  3. Heat 2 tablespoons olive oil in a large ovenproof skillet over medium-high heat. Brown the stuffed thighs for about 2–3 minutes per side, beginning seam side down, then transfer them temporarily to a plate.
  4. Add 1 tablespoon olive oil to the skillet if needed. Cook the chopped onion for 3–4 minutes, add the minced garlic, and cook for about 30 seconds.
  5. Add the tomatoes, dried oregano, red pepper flakes if using, remaining kosher salt, black pepper, and dry white wine or water. Simmer for 5 minutes, breaking up whole tomatoes if necessary.
  6. Return the chicken to the skillet and spoon some tomato sauce over the rolls. Transfer the skillet to the oven and bake for 20–25 minutes, until the thickest part of the chicken reaches 165°F and the mozzarella is melted.
  7. Let the chicken rest for 5 minutes, then carefully remove every toothpick. Spoon the tomato sauce over the stuffed thighs and serve while hot.
