Stuffed Caprese Chicken Breasts

Juicy chicken breasts are filled with fresh mozzarella, tomato, and basil, seared until golden, and baked until perfectly cooked. Balsamic glaze added at the end gives this easy dinner its signature sweet-tangy finish.

  • 4 Boneless, skinless chicken breasts, about 6–8 ounces each
Seasoning
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Kosher salt, divided
  • ½ teaspoon Freshly ground black pepper
  • 2 Garlic cloves, minced
Cooking
  • 1 tablespoon Olive oil, plus more for the pan if needed
Filling
  • 8 ounces Fresh mozzarella, cut into 8 slices
  • 1 Large ripe tomato, cut into 8 thin slices
  • ¼ cup Fresh basil leaves
Finishing
  • 1–2 tablespoons Balsamic glaze

Method
 

Step-by-Step
  1. Heat the oven to 375°F and lightly oil a baking dish or ovenproof skillet. Pat the chicken breasts dry with paper towels so the seasoning adheres and the chicken browns properly.
  2. Using a sharp knife, cut a horizontal pocket into the thickest part of each chicken breast, taking care not to cut all the way through. Season the inside and outside with Italian seasoning, the divided kosher salt, black pepper, and minced garlic.
  3. Pat the tomato slices dry, then fill each chicken pocket with mozzarella, tomato, and basil. Avoid overfilling, and secure the openings with toothpicks if needed.
  4. Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken for about 2–3 minutes per side, until lightly browned; this step may be skipped if preferred.
  5. Transfer the skillet to the oven and bake for approximately 20–25 minutes, or until the thickest part of each breast reaches 165°F on an instant-read thermometer. If using a baking dish, transfer the seared chicken carefully before baking.
  6. Let the chicken rest for 5 minutes after baking, then remove the toothpicks. Drizzle with 1–2 tablespoons of balsamic glaze immediately before serving.

Notes

Pat tomato slices dry to reduce excess moisture, do not overfill the pockets, and use an instant-read thermometer to confirm 165°F in the thickest portion. Refrigerate leftovers promptly and reheat gently until hot.
