Strawberry Kiwi Lime Sorbet

A bright and refreshing fruit sorbet made with ripe strawberries, kiwi, lime juice, and a smooth simple syrup. This recipe yields about 1 quart, or 8 servings.

  • 1 pound (454 g) Ripe strawberries, hulled
  • 4 kiwis, about 10–12 ounces (285–340 g) Ripe kiwis, peeled
  • 2 tablespoons (30 ml) Freshly squeezed lime juice
  • 1 teaspoon Finely grated lime zest
Syrup
  • 1/2 cup (100 g) Granulated sugar
  • 1/2 cup (120 ml) Water
Optional Texture Helper
  • 1 tablespoon, optional Light corn syrup, agave syrup, or honey
Seasoning
  • 1 small pinch Fine salt

Method
 

Step-by-Step
  1. Combine the sugar and water in a small saucepan. Heat over medium heat for 3–5 minutes, stirring just until the sugar dissolves; do not boil vigorously. Remove from the heat and cool.
  2. Add the strawberries, peeled kiwis, lime juice, lime zest, cooled syrup, optional corn syrup, agave, or honey, and salt to a blender. Puree until completely smooth.
  3. Taste the puree before chilling. It should taste slightly sweeter and more intensely flavored than the finished sorbet because freezing dulls sweetness; adjust with a little more lime juice or sugar if needed.
  4. For especially smooth sorbet, pour the puree through a fine-mesh strainer to remove strawberry seeds and some kiwi seeds. Refrigerate the mixture for at least 30 minutes, preferably 1 hour, until thoroughly cold.
  5. Churn the cold mixture in an ice-cream maker according to the manufacturer's instructions, usually for 20–25 minutes. Transfer the softly frozen sorbet to a shallow, freezer-safe container, cover, and freeze for 2–4 hours until firm.
  6. Let the sorbet stand at room temperature for 5–10 minutes before scooping. Serve in chilled bowls or glasses with a little lime zest, sliced strawberry, or a thin lime wheel.

Notes

Use ripe, fragrant fruit for the best flavor and texture. Chill the puree completely before churning, and use a shallow freezer-safe container for the final freeze. Optional corn syrup, agave syrup, or honey improves scoopability.
