Spooky Halloween Chili Con Queso Dip

A creamy, hearty chili con queso dip made with Velveeta, RO*TEL, canned chili, and seasoned ground beef, finished with a spooky sour-cream spiderweb. It makes about 8 to 10 servings and is ready in approximately 25 to 30 minutes.

Dip
  • 1 pound Lean ground beef
  • 1 small Small yellow onion, finely diced
  • 1 15-ounce can Chili, preferably without beans
  • 1 10-ounce can RO*TEL diced tomatoes and green chiles, undrained
  • 1 pound Velveeta or other processed American-style cheese, cubed
  • 1/4 cup Milk, plus more if needed
  • 1/2 teaspoon, optional Chili powder
Decoration
  • 1/4 cup Sour cream
  • 2-4 olives Pitted black olives
For Serving
  • As needed Tortilla chips

Method
 

Step-by-Step
  1. Brown the ground beef and finely diced onion in a large skillet or saucepan over medium heat, breaking the beef into small pieces. Cook for about 6 to 8 minutes, or until no pink remains.
  2. Drain any excess grease from the skillet. Return the beef mixture to the pan if necessary.
  3. Stir in the canned chili, undrained RO*TEL, and optional chili powder until the mixture is evenly combined.
  4. Reduce the heat to low and add the cubed Velveeta along with the milk. Stir frequently for about 5 to 8 minutes, until the cheese has completely melted and the dip is smooth; do not let it boil.
  5. Transfer the hot dip to a serving bowl or small slow cooker. If it thickens while sitting, stir in a small splash of milk.
  6. Spoon the sour cream into a small plastic bag or piping bag and snip off a tiny corner. Pipe concentric circles over the dip, then drag a toothpick or skewer from the center outward at intervals to form a spiderweb; add sliced black olives as a simple spider if desired.
  7. Serve the dip hot with tortilla chips. Keep it warm during serving and stir occasionally for the creamiest texture.

Notes

For a slow cooker, combine the browned beef, chili, RO*TEL, cheese, and milk, then heat on LOW for about 1 to 2 hours, stirring occasionally. Keep the dip on WARM while serving and add a splash of milk if it becomes too thick. Refrigerate leftovers promptly in a covered container.
