- Heat the oven to 350°F (175°C). Line a rimmed baking sheet or loaf pan with foil or parchment.
- Combine the breadcrumbs and milk in a large bowl and let them stand for about 5 minutes until softened.
- Add the ground beef, onion, eggs, ketchup, Worcestershire sauce, garlic, salt, pepper, and Italian seasoning.
- Mix gently with clean hands or a fork just until the ingredients are combined. Do not overmix, because compacting the meat can make the finished loaf dense.
- Shape the mixture into an oval monster, skull, or pumpkin on the lined baking sheet. Keep the form sturdy but avoid packing it tightly.
- Stir together the glaze ingredients and spread about half over the shaped meatloaf.
- Bake for 45 minutes, then spread the remaining glaze over the top.
- Continue baking for 15–30 minutes, until the center reaches 160°F (71°C) on an instant-read thermometer.
- Rest the meatloaf for 10–15 minutes before slicing. Add mashed-potato or vegetable decorations just before serving.
Notes
A free-form loaf usually develops better glaze and browning than one baked entirely in a deep loaf pan. Use an instant-read thermometer because a wider or flatter Halloween shape may cook at a different rate. Store leftovers covered in the refrigerator and reheat gently until hot.
