Ingredients

Spinach Dip
  • 1 10-ounce package Frozen chopped spinach, thawed
  • 16 ounces (2 cups) Sour cream
  • 1 cup Mayonnaise
  • 1 envelope (about 1.4 ounces) Dry vegetable soup or dip mix
  • 1 8-ounce can Sliced water chestnuts, drained and finely chopped
  • 3 green onions Green onions, finely chopped
Bread Bowl
  • 1 loaf, approximately 1 to 1 1/2 pounds Round unsliced sourdough, pumpernickel, rye, or French bread

Method

Step-by-Step
  1. Thaw the frozen spinach completely. Place it in a clean kitchen towel or several layers of paper towel and squeeze firmly until as much liquid as possible has been removed.
  2. In a large bowl, stir together the sour cream, mayonnaise, and dry vegetable soup or dip mix until combined.
  3. Add the squeezed spinach, chopped water chestnuts, and green onions. Stir until the vegetables are evenly distributed throughout the creamy mixture.
  4. Cover the bowl and refrigerate the dip for at least 2 hours. Chilling overnight is preferred when your schedule allows because the seasoning hydrates and the flavors become more balanced.
  5. Cut a lid from the top of the round bread loaf. Hollow out the center, leaving a sturdy shell about 3/4 to 1 inch thick.
  6. Cut the removed bread into cubes. If desired, toast the cubes in a 350°F oven for about 8–10 minutes, then let them cool.
  7. Spoon the chilled dip into the bread bowl just before serving. Arrange the bread cubes, vegetables, and crackers around the loaf.

Notes

Drain the spinach exceptionally well so the dip stays thick and the bread bowl does not soften too quickly. Keep the dip refrigerated until serving, and do not fill the bread bowl far in advance.
