Spinach-and-Cheese Stuffed Chicken Breast

Tender chicken breasts are filled with creamy spinach, mozzarella, Parmesan, and garlic, then baked until juicy and fully cooked. This comforting dinner serves four and comes together in about 45–50 minutes.

Chicken and Seasoning
  • 4 breasts Boneless, skinless chicken breasts, about 6–8 ounces each
  • 1 tablespoon Olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Paprika
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Kosher salt, plus more for the filling
  • 1/4 teaspoon Black pepper
Filling
  • 4 ounces Softened cream cheese
  • 2 cups Fresh baby spinach, roughly chopped
  • 1/2 cup Shredded mozzarella
  • 1/4 cup Grated Parmesan
  • 2 cloves Garlic cloves, minced

Method
 

Step-by-Step
  1. Heat the oven to 375°F and lightly grease a baking dish.
  2. Slice horizontally through the thickest side of each chicken breast to create a pocket, taking care not to cut all the way through.
  3. Mix the softened cream cheese, chopped spinach, mozzarella, Parmesan, and minced garlic. Season the filling lightly with salt and pepper.
  4. Divide the filling among the chicken pockets and press the openings closed. Secure the edges with toothpicks if needed.
  5. Rub the chicken with olive oil. Combine the Italian seasoning, paprika, garlic powder, kosher salt, and black pepper, then sprinkle the mixture over both sides.
  6. Place the chicken in the prepared baking dish and bake for 25–30 minutes, depending on the thickness of the breasts.
  7. Check the thickest part with an instant-read thermometer. The chicken is ready at 165°F; rest it for 5 minutes before removing toothpicks and serving.

Notes

Squeeze excess moisture from fresh or thawed frozen spinach so the filling stays thick. About 5 ounces of frozen spinach, thawed and squeezed very dry, replaces 2 cups fresh spinach. For better browning, sear the stuffed chicken in an oven-safe skillet for 2–3 minutes per side before baking.
