- Heat the oven to 375°F and lightly grease a baking dish.
- Slice horizontally through the thickest side of each chicken breast to create a pocket, taking care not to cut all the way through.
- Mix the softened cream cheese, chopped spinach, mozzarella, Parmesan, and minced garlic. Season the filling lightly with salt and pepper.
- Divide the filling among the chicken pockets and press the openings closed. Secure the edges with toothpicks if needed.
- Rub the chicken with olive oil. Combine the Italian seasoning, paprika, garlic powder, kosher salt, and black pepper, then sprinkle the mixture over both sides.
- Place the chicken in the prepared baking dish and bake for 25–30 minutes, depending on the thickness of the breasts.
- Check the thickest part with an instant-read thermometer. The chicken is ready at 165°F; rest it for 5 minutes before removing toothpicks and serving.
Notes
Squeeze excess moisture from fresh or thawed frozen spinach so the filling stays thick. About 5 ounces of frozen spinach, thawed and squeezed very dry, replaces 2 cups fresh spinach. For better browning, sear the stuffed chicken in an oven-safe skillet for 2–3 minutes per side before baking.
