Spicy Thai Beef Salad

Ingredients
  

For the Beef
  • 1 lb (450 g) Flank steak, sirloin steak, or rib-eye
  • 1 tsp Neutral oil, if pan-cooking
  • 1/2 tsp Kosher salt
  • 1/4 tsp Ground black pepper
For the Dressing
  • 3 tbsp Fresh lime juice
  • 2 tbsp Thai fish sauce
  • 1 tbsp Granulated sugar or palm sugar
  • 1-2 chilies Fresh Thai bird's-eye chilies, thinly sliced
  • 1 clove Small garlic clove, finely grated or minced
  • 1 tbsp Water, optional
For the Salad
  • 1 small onion Small red onion or shallots, very thinly sliced
  • 1 cucumber Medium cucumber, halved and sliced
  • 1 cup Cherry tomatoes, halved
  • 1/2 cup Fresh cilantro leaves and tender stems
  • 1/2 cup Fresh mint leaves
  • 1/4 cup Thai basil leaves, optional
  • 4 cups Mixed salad greens or torn romaine lettuce, optional
Optional Traditional Additions
  • 1-2 tbsp Toasted rice powder
  • 1-2 tbsp Thinly sliced scallions
  • as needed Extra sliced chilies for serving

Method
 

Step-by-Step
  1. Stir the lime juice, fish sauce, sugar, sliced chilies, and garlic together in a small bowl until the sugar dissolves. Taste the dressing and adjust the lime, fish sauce, sugar, or chilies so it tastes sour, salty, sweet, and spicy; add the water only if it tastes too strong.
  2. Slice the red onion, cucumber, and tomatoes, then pick the cilantro, mint, and Thai basil leaves. Keep the prepared vegetables and herbs chilled while the beef cooks.
  3. Pat the steak dry and season both sides with kosher salt and black pepper. Heat a grill, grill pan, or heavy skillet over high heat, adding the neutral oil if using a skillet.
  4. Cook the steak for approximately 3 to 5 minutes per side, depending on its thickness, until medium-rare. The center should reach about 130 to 135°F (54 to 57°C) after resting.
  5. Transfer the steak to a plate and let it rest for 5 to 10 minutes. Slice it thinly across the grain so the muscle fibers are shortened and every piece stays tender.
  6. Toss the sliced beef with the red onion, cucumber, tomatoes, cilantro, mint, and Thai basil. Add the dressing gradually and toss gently, then serve immediately over salad greens or on its own.
  7. If using toasted rice powder, stir it in at the end along with scallions or extra sliced chilies. The rice powder adds a lightly nutty toasted flavor associated with Thai nam tok-style beef salad.

Notes

Resting the steak and slicing it across the grain are essential for tender beef. Dress the salad immediately before serving so the herbs and lettuce stay fresh and the vegetables do not release excess water.
