Spicy Shrimp Over Rice

Tender, spice-seasoned shrimp simmer briefly in a smoky tomato-garlic sauce and are served over fluffy seasoned white rice. This flavorful skillet meal makes 4 generous servings.

Ingredients
  

For the Rice
  • 1 1/2 cups Long-grain white rice
  • 2 1/4 cups Water or chicken stock
  • 1/2 teaspoon Salt
  • 1 tablespoon Butter or olive oil
For the Shrimp and Sauce
  • 1 1/2 pounds Large shrimp, peeled and deveined
  • 2 tablespoons Olive oil, divided
  • 1 Small yellow onion, finely diced
  • 4 Garlic cloves, minced
  • 1 Small jalapeño, seeded and minced
  • 1 14- to 15-ounce can Diced tomatoes, preferably fire-roasted
  • 1 tablespoon Tomato paste
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Chili powder
  • 1/2 teaspoon Ground cumin
  • 1/4 teaspoon Cayenne pepper
  • 1/2 teaspoon Kosher salt, plus more as needed
  • 1/4 teaspoon Black pepper
  • 1/2 cup Chicken stock or water
  • 1 tablespoon Fresh lime juice
  • 2 tablespoons Fresh cilantro or parsley, chopped

Method
 

Step-by-Step
  1. Rinse the rice until the water runs mostly clear. Combine the rice, water or chicken stock, salt, and butter or olive oil in a saucepan. Bring to a boil, cover, reduce heat to low, and simmer for 15–18 minutes. Turn off the heat and let the rice stand, covered, for 5 minutes, then fluff with a fork.
  2. Pat the shrimp very dry. Toss them with about half of the smoked paprika, chili powder, cumin, cayenne, kosher salt, and black pepper.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook the shrimp for 1–2 minutes per side, just until pink and nearly cooked through. Transfer them to a plate.
  4. Add the remaining tablespoon of olive oil to the skillet. Sauté the onion for 3–4 minutes until softened, then add the garlic and jalapeño and cook for about 30 seconds.
  5. Stir in the diced tomatoes, tomato paste, remaining spices, and chicken stock or water. Simmer for 5–8 minutes, stirring occasionally, until the sauce is slightly thickened.
  6. Return the shrimp to the skillet and cook for 1–2 minutes more, just until fully opaque. Stir in the lime juice, garnish with cilantro or parsley, and serve over the hot rice.

Notes

Pat shrimp dry for better browning and add them back only at the end so they do not become rubbery. Shrimp are ready when opaque and curled into a loose C shape rather than a tight O. Refrigerate leftovers promptly and reheat gently.
