- Cook the bacon in a skillet over medium heat until browned and crisp, about 15-20 minutes depending on thickness. Drain on paper towels and reserve.
- Combine the chilled tomato juice, vodka or tequila, lime juice, Worcestershire sauce, horseradish, hot pepper sauce, adobo sauce or minced chipotle, celery salt, cumin, and black pepper in a pitcher.
- Stir thoroughly and taste. Add more horseradish for pungency, more hot sauce for heat, or more lime juice for acidity.
- Chill the mixture for at least 15-30 minutes if time allows so the seasonings can blend.
- If desired, rub lime around the rims of four glasses and dip them in coarse salt or chili-lime seasoning. Fill the glasses with ice and pour in the Bloody Mary mixture.
- Garnish each glass with a celery stalk, lime wedge, jalapeño slices, and one strip of bacon. Serve immediately.
Notes
Add horseradish and hot sauce gradually because brands vary in strength. For a more pronounced Southwest flavor, substitute tequila for vodka. Keep the mixed tomato base refrigerated and add ice only when serving.
